
Gluten-Free Tahini Blondies

- 1-1/4 cup almond flour
- 2 Tbsp. coconut flour
- 1 stick butter or vegan butter
- 3 tsp. vanilla extract
- 2 eggs or flax eggs
- 1/2 cup tahini
- 2 tsp. monk fruit or Stevia
- Pinch of salt
Optional: Dark chocolate chips, toasted almonds or sesame seeds
- Preheat oven to 350 degrees F. Oil or butter baking dish.
- In medium bowl, combine flour and salt.
- In separate bowl, mix butter, eggs, monk fruit and vanilla.
- Slowly sift flour mixture into wet mixture. Add tahini and mix until a smooth consistency.
- Pour batter into prepared baking dish and back 20-30 minutes.
- Test doneness with toothpick in center. If toothpick is clear, blondies are ready.
